Liquid:
5 litres (8 3/4 pt or 1 3/8 U.S. gal) White Bouillon Nutritive
Ingredients:
1 1/2 kg (3 lb 6 oz) very lean beef, well trimmed and chopped
the chopped giblets of 6 chickens
2 roast carcasses of chicken
1 boiling fowl, lightly browned in the oven
Flavouring Ingredients:
100 g (3 1/2 oz) carrot
200 g (7 oz) leek
both roughly chopped into small pieces
Clarifying agent:
2 egg whites
Cooking time: 1 1/2 hours
Method: As for Ordinary Consomm�
